  • Puff pastry

  • Plain flour
  • Caster sugar

Directions
  • Whisk flour, salt, and sugar in a large whisking bowl. Beat the eggs and add milk. Let the batter stand for 15 to 20 minutes until bubbly
  • Melt butter in a small skillet over medium heat. Swirl the pan to ensure proper coating. Drop batter on the pan evenly about ¼ cup at a time.
  • Cook for 2 minutes. Flop and cook for a minute again.
  • Repeat the steps with remaining batter
  • Serve with powdered sugar and fresh fruit

French Onion Soup

This soup comprising of slowly caramelized onions is nothing less than satisfying.

Ingredients
  • 6tbsp. of unsalted butter
  • Kosher salt
  • 6 medium onions thinly sliced
  • Black pepper
  • 1 cup white wine
  • 2 cups beef broth
  • Slices of country bread halved crosswise
  • 2 cups grated Gruyere cheese
  • 2 tbsp. fresh thyme leaves

Directions
  • Heat butter in a large pot and add chopped onions. Add 1 ¼ tsp. of salt and ¼ tsp. of pepper and cook. Stir occasionally. Cook until tender.
  • Reduce the heat to medium and cook until the onions turn golden brown
  • Add wine and cook until it is reduced.
  • Add broth and 6 cups of water. Bring the contents to boil. Reduce the heat and simmer the contents for 15 minutes
  • Heat broiler and place bread on a baking sheet. Broil until it turns golden brown and crisp. Sprinkle with cheese and broil until it melts
  • Serve soup in a bowl and top with toasts. Sprinkle thyme and serve.

Mussels make a fantastic quick meal as they can be cooked in a couple of minutes. This delicious French delicacy will make an excellent addition to your dinner menu.

  • All-purpose flour
  • 1 tablespoon sugar
  • ¼ tablespoon Kosher salt
  • 2 large eggs
  • 1 tablespoon butter
  • Powdered sugar for serving
  • Fresh fruit for serving

Directions
  • Heat the oven to 425F. Toss potatoes, oil, garlic, ¼ tsp. salt and pepper on a rimmed baking sheet
  • Roast the potatoes by turning them occasionally until they turn crisp and golden brown
  • Bring wine to boil in a large pot when the potatoes are almost cooked
  • Add mussels and simmer. Cover the pot and cook for 3 to 4 minutes
  • Mix pesto in cooking liquid and serve with oven fries
